A couple weeks ago I made a Frittata for breakfast. I’ve never made one before but was up for the challenge on this particular morning. Lucky for me my husband is a good sport and willing to try my kitchen creations. Lucky for my husband this creation actually turned out to be extremely tasty!
In the mix:
Preheat oven to 350 degrees.
Spray small pan with cooking spray (make sure pan has ovenproof handle).
Chop and clean veggies, saute over medium heat.
Whisk egg with salt and pepper in a bowl.
Poor the egg mixture and pepperoni into pan (over veggies), move it around with spatula until slightly solidified.
Put pan in oven.
Bake until the frittata is almost firm to the touch (15 to 20 minutes). Put grated cheese on top and continue baking until firm.
